Almond Bark Toffee

If you're looking for an easy, sweet addition to your Christmas cookie plate, consider this sweet and easy candy.


Pouring a sugar-butter mixture over saltine crackers turns them into a delicious toffee base. Be sure to be patient to get that mixture to a nice brown color. Stir constantly, so as not to burn it.

The sweet taste of almond bark, mixed with some food coloring, makes this a colorful candy to enjoy for the holidays. For a variation, try this with chocolate almond bark!


INGREDIENTS

1 pkg white almond bark

35-40 saltine crackers

1 cup unsalted butter

1 cup granulated sugar

1/2 tsp salt

1 tsp vanilla extract

Sprinkles for decorating, optional

Food coloring, optional


DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. Line a baking sheet with parchment paper or aluminum foil. Spray with cooking spray.

  3. Lay the saltine crackers, close together, in the pan, in a single layer, until the pan is full.

  4. In a medium saucepan, over medium heat, add butter, sugar, and salt. Cook, whisking constantly, until butter is melted, about 3-5 minutes. While continuing to whisk, bring mixture to a boil and let cook for an additional 7-9 minutes or until mixture turns a light brown color.

  5. Remove saucepan from heat. Add vanilla and mix well.

  6. Pour buttery sugar mixture evenly over Ritz crackers, coating all of the crackers.

  7. Bake the coated crackers for 13-15 minutes or until bubbly and brown.

  8. Remove the baked crackers and allow to cool slightly while preparing the chocolate.

  9. I divide the almond bark by how many colors I'm going to use. For my Christmas Almond Bark Toffee, I use white, red and green. Heat each portion, separately, in the microwave for 30 seconds on 50% power, then stir. Continue to heat for 15 second intervals, mixing in between, until the almond bark is completely melted.

  10. Pour melted white almond bark evenly over the baked crackers, coating as many as possible. If needed, use a spatula to spread the almond bark over the crackers.

  11. Repeat step 9, adding red and green food coloring, respectively, to the appropriate portion. Then repeat step 10 for each color.

  12. If desired, drag a toothpick or butter knife through the colors once or twice (not too much) to create a swirl pattern. While chocolate is still wet, top with festive sprinkles (optional).

  13. Refrigerate the Almond Bark Toffee for at least 2 hours or until set.

  14. Once firm, break the Ritz cracker toffee into serving-sized pieces.

  15. Serve immediately.


NOTE: Almond Bark Toffee can be refrigerated for up to 2 weeks in an airtight container.
