Broccoli sometimes gets a bad wrap. You've probably seen the videos that show kids unwillingly eating broccoli at the dinner table. It doesn't have to be that way. There are many ways to make broccoli taste good. Since broccoli is a vegetable that is packed with fiber, vitamin C, vitamin K, iron, potassium and antioxidants, it's a vegetable that is worth the effort to make it taste good for the healthy benefits it provides.
This Broccoli Cranberry Salad is a great sweet ‘n salty salad. The sweetness of the dressing and cranberries blends so well with the saltiness of the sunflower seeds and bacon. It’s a perfect disguise to those vegetables that are thrown in there. I say that because my kids love this salad and they are not great vegetable eaters.
I love to serve this salad for just about any holiday and I have also taken this to many potlucks. It’s always a big hit!
SERVINGS: 10
INGREDIENTS
Salad
3-4 heads broccoli, chopped into small pieces
1/2 cup red onion, chopped
1/2 cup salted sunflower seeds
1/4 cup dried cranberries (Craisins)
6 strips bacon, cooked crispy & chopped
Dressing
1 cup mayonnaise
1/4 cup sugar
2 Tbsp red wine vinegar
INSTRUCTIONS
Salad
Cook the bacon and chop into small pieces
Chop the broccoli.
Chop the onion. Add the onion, sunflower seeds and cranberries to the broccoli.
Add the bacon.
Dressing
Mix together the mayonnaise, sugar and red wine vinegar.
Add the dressing to the salad mixture. Serve immediately.
