Mandarin Orange Salad Dressing

Are you looking for a little twist on a lettuce salad? This Mandarin Orange Salad & Dressing adds a fruity flair to an otherwise ordinary side dish. The dressing has a normal base with vinegar, oil, salt, sweetener and seasoning. You can't forget to add the extras, along with the lettuce, of red onion and celery. Of course, the star of this salad is the mandarin oranges, with its pop of color. I love to add croutons to my salads for more crunch. It's THAT easy!

This is a great salad for a summer day, with its fresh and light flavor, and it's easy to make! My life is too busy for time consuming steps and hard to find ingredients. Most of the ingredients in this recipe are kitchen staples. If you don't have them in your kitchen, they are not hard to find in any grocery store.


The colors of red, orange and green, the crunch of the vegetables and croutons and the mix of the sweet and savory flavors, makes this a salad to remember. Enjoy!


SERVINGS: 6


INGREDIENTS

  • 1 head lettuce, romaine or iceberg (I prefer romain.)

  • 3/4 cup red onion, thinly sliced

  • 1 cup celery, chopped


Dressing

  • 1/4 cup cider vinegar

  • 1/2 cup canola oil

  • 1 tsp salt

  • 1/2 cup sugar

  • 1 tsp parsley flakes

  • 1/8 tsp pepper, optional


Toppings

  • 11 oz mandarin oranges, drained

  • croutons, optional

INSTRUCTIONS Salad

  1. Chop the lettuce, red onion & celery. Mix together.

Dressing

  1. Combine the vinegar, canola oil, salt and sugar. Mix well. (If you have time, put it in a blender for a smoother consistency.)

  2. Drizzle the dressing over the lettuce salad. Add the mandarin oranges. Toss to coat.

  3. Add croutons if you wish.
